A Recipe: Coconut Lime Pie

I had to share this recipe with you. It was my most popular Instagram post from 2014 and well deserved!

It’s raw, vegan, paleo, gluten free and grain free = guilt free, if you ask me.

I threw the ingredients together so these are rough estimates. Use your intuition and your taste buds to get it right.  You do need to soak the nuts beforehand!

I used mostly organic ingredients – definitely recommend spending the extra $$ for a taste sensation 🙂

Holy YUMMO! Enjoy!

Base:
1-2 cups pitted dates
1 tbsp coconut oil
1 cup almonds
Method:
Throw together in a blender or food processor and combine until mixture sticks together when you pinch it. Press out into a slice tin lined with baking paper or a springform pan. Let it set in the freezer while you make the filling.
Filling:
250g/2 cups soaked cashews (soak for at least 2 hours to soften and activate the nuts)
1-2 tsp Vanilla powder
1 tbsp Coconut oil
1-2 tbsp Rice malt syrup/maple syrup
Flesh of 2 fresh coconuts
2 limes, juice + zest +1 extra for deco (maybe more if you’re using conventional limes)
Method:
Blend all together in a blender/processor until smooth.
Pour over base and sprinkle with extra zest. Leave in the freezer to set for at least an hour.
Deco with fresh lime twists and/or shredded coconut right before you serve.
